Questions
Each knife in our shop is expertly crafted in Japan by skilled bladesmiths.
To keep your knife in optimal condition, make sure to dry it completely and store it securely in a dry place.
No, Japanese knives are different from Western knives and are generally not suitable for dishwashers unless specifically stated. If a knife has a Japanese handle, assume it is not dishwasher safe, whereas a Western-style handle may be, provided it is not made from carbon steel.
No, it’s not recommended as it can chip the blade and can be dangerous.
Yes, carbon steel knives are highly prone to rusting, while stainless steel knives are less likely to rust, although they can still do so in humid conditions or a damp environment. It’s best to wipe them dry after use and store them in a dry place.
Over time, a knife will naturally become dull with regular use. The higher the durability of the steel, the less often the knife will need sharpening. We recommend using Japanese whetstones or diamond whetstones for a professional finish. Alternatively, a knife sharpener can be used, but never use a sharpening steel, as it’s designed for de-burring rather than sharpening.
